The pineapple cordial featured in the top 5 cocktails at Cantina in San Francisco

This recipe is a gem from my bar mentor, Duggan McConnell's book "Drinking the Devil's Acre: A Love Letter from San Francisco and Her Cocktails." The pineapple cordial featured in the top 5 cocktails at Cantina in San Francisco back in the day when I was just a young barback. While it's saddening that the bar is no longer around, we can now enjoy the delights of Pacific Cocktail Haven in its place.

Pineapple cordial is truly a symphony of flavors, boasting a delightful balance of sweetness, tartness, and a hint of the exotic. The primary flavor, of course, is the tropical, sun-kissed sweetness of ripe pineapples. This is harmoniously contrasted by a tart edge, which adds depth and prevents the sweetness from becoming overwhelming. The end result is a taste that is bright, fresh, and undeniably irresistible. It's this distinctive flavor profile that makes pineapple cordial such an exciting addition to a variety of cocktails, adding a splash of tropical sunshine to each sip.
