The pineapple cordial featured in the top 5 cocktails at Cantina in San Francisco
This recipe is a gem from my bar mentor, Duggan McConnell's book "Drinking the Devil's Acre: A Love Letter from San Francisco and Her Cocktails." The pineapple cordial featured in the top 5 cocktails at Cantina in San Francisco back in the day when I was just a young barback. While it's saddening that the bar is no longer around, we can now enjoy the delights of Pacific Cocktail Haven in its place.
Pineapple cordial is truly a symphony of flavors, boasting a delightful balance of sweetness, tartness, and a hint of the exotic. The primary flavor, of course, is the tropical, sun-kissed sweetness of ripe pineapples. This is harmoniously contrasted by a tart edge, which adds depth and prevents the sweetness from becoming overwhelming. The end result is a taste that is bright, fresh, and undeniably irresistible. It's this distinctive flavor profile that makes pineapple cordial such an exciting addition to a variety of cocktails, adding a splash of tropical sunshine to each sip.
The versatility of this easy pineapple cordial recipe extends far beyond its role as a refreshing standalone beverage. This vibrant tropical elixir serves as a delightful base for a myriad of cocktails, infusing a burst of fruity flavor and a touch of sweetness that melds seamlessly with a variety of spirits. From a classic pineapple margarita to a tropical twist on a Moscow mule, pineapple cordial enhances each cocktail with its unique flavor profile. Even in the realm of non-alcoholic beverages, it shines. Mixed with soda water, it becomes a sparkling refreshment; blended with iced tea, it creates a tropical twist on a classic. Its culinary uses don't end at beverages, either. Pineapple cordial can be used as a marinade, a salad dressing ingredient, or even as a glaze for roasting meats, truly demonstrating its wide-ranging versatility.
Now that you've got your hands on this vibrant tropical elixir, you may be wondering about the best ways to enjoy it. Here are a few serving suggestions and cocktail recipes to get you started:
